This five-star hotel/winery estate is located in Sardón de Duero, to the east of Valladolid, in the centre of the wine region of the Duero Valley. The Italian architect Marco Serra has carried out an impeccable renovation project that highlights the sobriety of the ancient 12th century monastery, giving to the space a relaxed, aristocratic, modern and austere air. The building renovation was a major project and it has converted the area of the old hostelry into 18 bedrooms and three suites, with views of the vineyards (where Abadia de Retuerta wines are produced), all with the services of an exclusive hotel, from the latest technology to small details such the Faber-Castell limited edition pencils. A genuine open-air museum with sculptures by Ulrich Rückriem, a contemporary German artist who removes enormous stones from the ground and reassembles them on the surface, is something not to be missed. The Swiss chef Urs Bieri skillfully manages the kitchen activity (located in the old refectory) and produces gourmet traditional dishes with a modern twist, prepared with local products, some of them from the fruit trees and herbs and vegetable garden of the property. An impressive spa is soon to be completed.
