Also at the forefront of the St James’s revival, new eatery Chop Shop has bravely opened its doors on London’s crumbling Haymarket. The first European outing for New York-based group Altamarea, the butcher-shop inspired restaurant is run by young British restaurateur Will Guess and offers a menu from chef Michael White that includes some New York favourites such as the Morini Meatballs as well as an array of steaks and chops. Like the food, the design by local agency 44th Hill also combines the edgy influences of both New York and London with distressed dark wood panelling, exposed whitewashed brick walls and large reclaimed tiles. An excellent selection of house cocktails will also be available, including the must-try Haymarket - Chop Shop’s version of the Manhattan, with Buffalo trace bourbon, Dolin sweet vermouth and pink clove.
