Spanish cheese master Poncelet has expanded its enterprise to launch a new cheese bar in Barcelona. Like its sister restaurant in Madrid, this outpost serves up a traditional Spanish menu, accented of course, with produce from its own state-of-the-art ripening centre. Designed by Valencian studio EstudiHac, the colourful eatery includes an impressive vertical garden, library area and cheese cave. And with more than 140 varieties to choose from, the company have made it effortless, by categorising its produce according to country, animal and intensity - a tactic that builds on its goal to educate consumers on the diversity of Spanish cheeses.
