Proef's Eat Love dinner, Amsterdam
We’ve raved about the culinary ingenuity of Marije Vogelzang and her groundbreaking Proef studio before. In addition to creating edible installations for clients such as BMW, Droog and Aesop, the Dutch ‘eating designer’ was the creative brains behind the monochrome spread at the late lunch we hosted one December.

Armed with simple, powerful concepts, and a penchant for tattooed vegetables and sugar sculpture, Vogelzang has travelled the world lecturing on her design ethos and producing some fantastical meals. When we last reported, her most memorable commissions had been compiled into a retrospective tome ‘Eat Love’ celebrating her ten years of food design.
Starting this evening, and running through August, Vogelzang will throw open the doors of her Amsterdam studio to welcome diners for the very first time. Christened the ‘Eat Love’ dinner, all courses have been adapted from the eponymous book and will be staged within the magical confines of Proef. The one-time gas factory comes complete with timber-framed ceilings and is encircled by parks.
Despite being the sister to Vozelgang’s revolutionary restaurant in Rotterdam, Proef Amsterdam rarely opens as a restaurant, making this one hot table. Without giving too much away, guests can expect appetizers and drinks in the garden, edible leaves from the Photosynthesis Tree, a starter, the White dinner as a main course, a dessert baked in clay and a parting gift.
