Maple & Ash — Chicago, USA

The traditional American steakhouse has had a much-needed facelift, thanks to hospitality entrepreneur Brian O’Connor, whose latest venture Maple & Ash, has just launched in Chicago’s historic Gold Coast district.
Spread over two floors, an easy-going ground floor bar leads to a lounge and main dining room above, where a 12-foot wood-burning hearth takes centre stage, roasting the restaurant’s selection of grilled meats, seafood and vegetables to perfection.
Designed by local outfit Studio K, steel-framed glass doors, natural wood panels and rich leather and velvet seating in burnt orange, lime green and slate grey tones, encapsulates the warmth and sophistication of steakhouses from a bygone era.
Watch chef Danny Grant in action from the open kitchen, which churns out classics from chilled seafood platters, wedge salads and a variety of steak cuts, served with a choice of mouth-watering toppings such as truffle butter, blue paradise cheese or even roasted bone marrow. Top off the calorific indulgence with one of eight different interpretations of the classic martini or a seasonal cocktail.
