Juan Mari and Elena Arzak are a father-and-daughter chef duo who are busy expanding their empire. Not content with running Arzak, the family’s century-old, three Michelin-starred restaurant in San Sebastián, they have now opened their first outpost in Belgravia’s Halkin hotel. Designed by London-based Ab Rogers, the elegant interior features subtle tones of greys and whites, offset by an undulating ceiling of hanging test tubes at various heights. These are filled with a spectrum of yellow-hued spices, from turmeric and cumin for the darker base notes to mustard and ginger for lighter shades.

On the menu are dishes made from locally-sourced produce, brought to life with Arzak’s signature earthy Basque flavours with a modern twist. Advised by a five-strong team called ‘Arzak Instruction’, which includes father and daughter, Ametsa is now the perfect solution for Londoners who want to experience the celebrated chefs’ cutting-edge fare.
