Serwus — Warsaw, Poland

According to Warsaw-based firm Moko Architects, over the past two decades the influx of international fast food into the country has lead to the steady decline of the traditional toasted baguette sandwich called zapiekanka. So, in a bid to revive the snack, the outfit has brought to life a new eatery modelled on the trailers they were sold from. Located in Mokotów - a popular neighbourhood in the south of Warsaw - the small red and yellow café comprises a journey of five zones, which begins with an order stall and ends with a stand up counter at which you can immerse yourself in the memories of the once popular cheese and mushroom nibble.
