In a country already heaving with superb multi-ethnic cuisines, it may seem a little incongruous that an all-American diner like Overeasy could make such a lasting impression on the local Singaporean palate.
To mark eight years of thick milkshakes, chipotle sauce, east Texan-style barbecued baby back ribs, truffled lobster mac and cheese, and fried chicken sandwiches, local studio Hui Designs have given the bayside restaurant a timely spruce-up.
The original 60s and 70s mood-board now sports a fresh red-checkered floor lined with brass-edged diner tables, timber panels and powder blue booths alongside retro fonts and movie-signboard counter displays. The menu, too, has been zhooshed up by culinary director Daniel Sia by way of tater tots with Maine lobster, corn dogs encased in crisp jalapeño cornmeal batter and, in a truly nostalgic homage, dark chocolate shortbread filled with white chocolate and paired with a Oreo milkshake.
