On the top floor of the Pudong Shangri-La hotel, Jade glows with celebrated designer Adam Tihany’s trademark blend of whimsy, fine detailing and bold colour. The most striking feature is the panoramic view, which allows guests to admire the golden light falling on The Bund below, while chef Paul Pairet’s Gallic technique lends contemporary global flavour to dishes like his enormous short rib, painted near black with teriyaki, and transluscent pomelo ravioli.
