Located on the fringe of Melbourne's emerging Collins Square precinct is the latest brainchild of internationally renowned chefs Pete Evans and Gavin Baker, inspired by travels through Spain and a love of Spanish cuisine. A design collaboration between Emily Pedersen of Walker Corporation (overseeing the square's redevelopment) and Anna Drummond and Trish Turner of CoLAB Design Studio has resulted in an intimate space that sits comfortably within a sophisticated glazed outer shell. Drawing on the aesthetics of classic San Sebastian tapas bars, the interior features metal wine racks, distressed charcoal timber, copper and brass detailing, stitched leather seating and exposed brickwork.
