Apologetic drinking (making sure your tipple is topped up with healthy mixers) fools nobody. It’s no bad thing to counteract the vitamin annihilation of the alcohol, but if you are going to drink one of the growing band of so-called healthy cocktails, like a yogurt punch, do so because of the delicious favour combinations and textures, not because of the probiotics.
The latest health-mixer to pique the mixologists’ imagination is the slightly efervescent fermented tea, Kombucha. ’Marco Polo’ at Betony, New York
This cocktail combines the richness of Amaro with the freshness of the home-made Kombucha and, with a lower alchohol content, is extremely refreshing. Recipe:
In a Belgian glass combine 25ml Amaro Montenegro, 35ml Kombucha, 15ml Maraschino and some cucumber slices. Add half a scoop of crushed ice and swizzle lightly. Add 25ml India pale ale. Top with crushed ice until a dome is formed

Bar Sajor have been using Kombucha since 2013 and create their house-made version by naturally fermenting it for 10-14 days with earl grey tea and carbonating it to taste.Recipe:

Kombucha Margarita at Fonda Lola, Toronto
This Mexican bistro ignites their authentic citrus margarita with a specially made Rose Kombucha.Recipe:
Mix 2oz Tequila Silver 100% Agave, 2oz lime juice, 1oz orange juice, 1/2oz grapefruit juice, 2oz smoked cinnamon infused with horchata (Mexican rice milk). Add a splash of maple syrup as sweetener. Shake it all together with ice cubes and serve. Top it up with 2oz of Rose Kombucha
