Ginzan-onsen in Japan is famous for its healing hot springs and atmospheric wooden buildings. One of these is the Fujiya, a 350-year-old ryokan inn run by Atsushi Fuji and his American wife Jeanie. When it was time to renovate, the couple called on Tokyo architect Kengo Kuma, who retained the historic structure, but created a sympathetic modern interior. Here you can slip on a yukata robe, take a dip in a natural spring bath, then enjoy a kaiseki dinner.
