California Tower, Hong Kong’s entertainment hotspot, is fast becoming a byword for creative dining concepts. The most notable is a new steak and seafood restaurant by Australian chef, David Laris. Designed by Shanghai-based Kokai Studios, the understated leather, wood and steel-grey marble interiors are nicely offset by a dramatic parametric mirrored, brass and timber ceiling, while wall-mounted light sculptures by Berlin-based artist Brittany Gould, add a touch of intrigue. The sublime free-range steaks – which are showcased in a bespoke meat locker – are prepared in a Josper Oven, while fresh seafood is enticingly presented in front of the open kitchen on a simple marble counter. Start with the torched Scottish salmon with Keta caviar, followed by a 40 oz Tomahawk rib eye, topped with foie gras and accompanied by maple-glazed cardamom carrots. Retreat to the restaurant’s popular terrace for after-dinner cocktail and views over Lan Kwai Fong, Hong Kong’s most frenetic entertainment district.
