In fact, Roelofs now cooks a dessert degustation on Thursday nights at the tiny Café Rosamond in Melbourne, while offering his wisdom to hotels, restaurants and cafes on consultation basis. With a no-bookings policy, seats at Café Rosamond are highly contested affairs, but once you've found a candlelit nook, the fun begins. The one- to three-course menu changes each week, but you can expect something along the lines of coffee meringue with dark chocolate grains, pineapple, and pasta filled with mascarpone topped with gold leaf - and yes, that all comes on one plate.
