Une terre, des hommes et des recettes
Of Belgium's two regions, Flanders and Wallonia, the latter is rather under-praised in the field of gastronomy. But Wallonia is about to have its culinary cache raised by a new collective called Generation W, initiated by star chef Sang Hoon Degeimbre of L'Air du Temps. Comprising a group of 10 locally acclaimed chefs, Generation W highlights the region's tastes and traditions. Their manifesto calls for the promotion of the region's heritage, cooking techniques, local produce, sincerity and independent spirit. They've gathered some iconic recipes in a new book, with chef profiles and tips on local markets and growers. The tome, 'Une terre, des hommes & des recettes' (A Land, Men & Recipes), out this month, provides the cornerstone for Wallonia's culinary rebirth.
