In a world where the delicate art of pastry making is slowly falling to the hands of frozen treats found in the supermarket, it's a relief to know there are still chefs out there who share our passion for the pleasures of proper desserts.
The contrast between an average tarte au citron and one of Pierre Herme's creations is quite remarkable and case in point. Entre is Herme's latest work and the creativity involved in each dessert is breathtaking, not to mention shamelessly drool-inducing.
Extase
Entre is composed of four parts; Revelation, Indulgence, Extase, and Infini, each a fully-conceived meal of pudding ingredients in its own right. From tomato and strawberry compote, cream of green peas with mint, candied ginger, to mascarpone cream with caramel, unlikely ingredients are combined with more regular pudding favourites to tempt the tummies of the insatiable pastry lover and foodies alike.
In an attempt to reduce unnecessary fussiness of decoration, the four compositions concentrate on the essential ingredients when it comes to presentation. Herme's describes them as 'an experience to savour and emotions to share'.
Entre, which feeds six to eight is presented in black porcelain dishes and is available exclusively through the two Pierre Herme shops in Paris on a made-to-order basis. For those of us who want all four now patience is required; each of the four desserts will be released individually throughout 2007.
